Episode 106: Accidentally Food Heavy

So much food chat in this episode, and not really on purpose. Restaurant vibes, food glow ups and what we're cookin up lately.

And of course, the long promised GRANOLA recipe (taken from @tessmadalyn of TikTok who you most definitely should be following if you enjoy cooking!) She says the secret to this recipe is to use SALTED roasted almonds and pumpkins seeds. I concur, it’s delicious.

Ingredients

1 cup toasted and salted almonds

1/2 cups toasted and salted pumpkin seeds

1/2 cup unsweetened coconut chips

1/2 cup unsalted butter (although I think you could easily use salted here and it would be FINE)

1/4 cup maple syrup

2 cups rolled oats

1/4 cup oat bran

1/2 tsp cinnamon

1/2 tsp ground ginger

2 egg whites

1/2 cup craisins/dried cherries (add as much as you want here really)

Directions

Preheat over to 350F/180C

Toast the almonds and pumpkin seeds in the over for 5 minutes. In the microwave (or over the stove in a saucepan) melt the butter and maple together. After the five minutes is up, add the coconut chips to the baking pan with the almonds and pumpkin seeds for 2-3 mins. Watch these— they’ll brown fast! Combine the rest of the ingredients, adding the toasted almonds, pumpkin seeds and coconut chips when they’re ready. Then mix and coast with the butter and maple. At this point, I recommend eating some of the mixture to see if it’s salty enough for you and if not, give it a pinch. Whisk the egg whites until they’re light and foamy and pour it in the granola mixture, mixing thoroughly to make sure everything is well coated. Spread the granola mixture on a baking pan and bake for 20 minutes at 300F/150C, toss and bake for another 10 minutes. Once you take it out, add the dried fruit and enjoy!!!!
